Method:

o Pull the corner bottom and overlap the tips pinching together.
o Fry in hot oil and drain.
o Serve with ketchup or mustard with a horseradish. It can make 120 pieces.

Almond Chicken Recipe
Ingredients:
o 1 ½ lbs. chicken breasts
o 1 tsp. honey
o 1 tbsp. cornstarch
o 12 ounces pea pods
o 3 tbsp. soy sauce
o ¼ cup vegetable oil
o 3 to 4 tbsp. Water
o 1 tsp. ginger
o 1 cup natural whole almonds
o 1/3 cup sherry
Method:
o Cut chicken breasts in ½ inch cube.
o Mix ginger, cornstarch, and honey. Blend soy sauce and sherry in water.
o Heat oil in a wok on medium heat.
o Add almonds and chicken. Cook for 3 minutes.
o Pour sherry mixture until sauce thickens and add pea pods. Stir fry and glazed.

A Taste of Chinese Culture
This evening I decided to go try a new Chinese restaurant. My problem with Chinese restaurants in America is that the food is always bland and that it does not taste like the food Chinese people eat. I do not know if it is because they use different ingredients or because they cater to an American palate, but I know that I often find that I never finish eating my food when we go to Chinese restaurants.
I am usually not a picky eater, but after I had the pleasure of eating homemade Chinese food I can say that I have very high standard for Chinese restaurants. It all happened because in high school I had a friend who was a recent immigrant from China. Her parents and her were having a hard time adjusting to the U.S. and I would try to teach them English and other American customs. While my classmates would pick on her for speaking in Chinese, I would try to learn as much as I could about China from her.
China was one of the countries I most longed to travel to and would love to hear her stories about her childhood in rural China. Because I was so friendly towards this family, they soon began to invite me for dinner all of the time. And boy can I say that the food was amazing. I had never had food so delicious and it did not taste anything like the food they served at the local Chinese restaurant. I learned how to use chopsticks for the first time too. On weekends, I started to learn more about the art of Chinese cooking from her mother. But because of my juvenile impatience, I did not learn enough. However, I did learn how to grow Chinese vegetables. My friend would always tell me that the vegetables in China tasted so much better because they were grown in different soil, but that our soil was good enough.
When I left to college I lost in touch with my friend. Years later we reunited and she now has a beautiful family, I found out that she went to college and became a successful businesswoman. But because of her busy schedule she never has time to cook a beautiful Chinese meal anymore. Instead, like me, she struggles to find the best Chinese restaurants.

1/2 tbsp minced ginger
1 tbsp olive oil
Directions
In a sauce pan, combine 2 cups of water, white vinegar, sugar, salt, white pepper and Tabasco sauce. Bring to a boil.
In a bowl, mix cornstarch, 2 tbsp water and Worcestershire sauce. Add to boiling mixture and stir constantly until thickened.
Remove from the stove and add ketchup, ginger, and olive oil. Mix well and refrigerate immediately.
Stir Fry
Stir fry has become more or less a catch-all for the American family. It’s convenient and fast, so it’s perfect for mom or dad on the go. With so many variations it’s also easier to accommodate people’s individual tastes.
Ingredients
1/3 cup soy sauce or favorite stir-fry sauce
1/2 tsp ground ginger
1/2 tsp garlic powder
vegetable oil
2 tsp dark sesame oil
1 lb boneless skinless chicken breast, cut into bite-size pieces
1 lb mixed vegetables to taste.
Directions
Combine stir-fry sauce, ginger, and garlic powder in a small bowl, se to the side. In a large nonstick skillet add oil, and place over medium-high heat until hot. Add chicken, and stir-fry until chicken is done. Once cooked, remove chicken from the skillet. Add vegetables to skillet and cook. Re-add the chicken and sauce mix. Cook over medium heat until everything is hot. Remove and serve over rice.

10 thinly sliced of bok choy leaves (Chinese cabbage, regular cabbage will do in a pinch)
3 1/2 cups of chicken broth
2 tsp soy sauce

5-6 red pepper flakes
1 garlic clove well chopped
Directions
In a medium sauce pan, bring chicken broth to a boil. Add soy sauce, sesame oil, pepper flakes and garlic clove. Next add the leaves of bok choy or cabbage. Simmer until cabbage is tender. In the case of bok choy cabbage, it will turn a nice green when done. For regular cabbage cook al Dante.
